Meat Pie

Nanna Pam's Chocolate cake


Ingredients 
  • 2/3 cup vegetable oil
  • 3 tablespoon cocoa
  • 1 3/4 cup S.R Flour
  • 2 eggs
  • 1 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1 cup milk
  • 1/2 teaspoon bi-carb soda
1.       Preheat oven to 180°C
2.       Place all the ingredients in a large mixing bowl and mix them together with an electric mixer for approximately  4 minutes (until all ingredient combined)
3.       Pour the mixture into a round cake tin that has been greased and lined with baking paper.
4.       Put in the oven and cook for 40-50 minutes (depending on your oven it can take up to 1hour to cook)
5.       Once the cake is cooked tip out on to wire cooling rack and cool.
6.       Once the cake is cooled ice with whatever icing you want.

Jelly Fluff

This recipe is out of one of my all time favourite cookbooks the CWA cookbook. A couple weeks ago one of my friends told me that the CWA cookbook is a book that you get when you get married, but if I were you I wouldn't wait that long and I'd get my hands on a copy as soon as possible. It is one of the must have Australian cookbooks.

Jelly Fluff
-1pkt Jelly Crystals
-1 small tin evaporated milk
-1/4 cup sugar
-3/4 cup hot water
-1 tablespoon lemon juice

Melt jelly crystals in hot water and stir till dissolved. Allow to cool and begin set. Whip milk with sugar and lemon juice and whip in jelly. Serve in glass dish garnished with fruit, whipped cream or chopped jelly.

Tips:
-When eating apple pie serve with cream or ice-cream.
-If you are going to make an pie always make sure that you dry bake the pastry first it cuts the cooking time and makes it taste heaps better.

Choc Bliss

White and Dark Chocolate Chip Cookies
This is a fairly easy recipe I read it in 'Australian Good Food' magazine and it is by Roberta Jack.


MAKES 16 PREP 20 mins COOK 15 mins
  • 125g unsalted butter, softened
  • 1/2 cup (110g) caster sugar
  • 1/2 tsp vanilla extract
  • 1 egg
  • 2 cups plain flour
  • 1/2 tsp baking powder
  • 2 tsp milk
  • 1/2 cup Nestle White Choc Bits
  •  1/2 cup Nestle Dark Choc Bits
1.Preheat oven to 180C or 160C fan. line two baking trays with baking paper.
2.Using an electric mixer, beat butter, sugar and vanilla until light and fluffy. Add egg and beat until combined. Sift in combined flour and baking powder stir lightly. Add milk and choc bits and stir to combine.
3.Roll up heaped tablespoons of mixture into balls. Place on prepared trays and flatten slightly, allowing at least 3cm between each cookie for spreading. Bake for 15 mins, until light golden. stand on trays for 5mins then transfer to a wire rack to cool.

My Tips:
-The recipe may say to put in 1 cup in total of choc bit but it doesn't really matter how much you put in you can put more or less.
-When I made the cookies I found that it was easier just to put all the ingredients in the bowl except for the choc bits and mix with the electric beater, then mix in the choc bits by hand.
- The recipe may say that you need to use baking powder but when I was making the cookies I couldn't find the baking powder in the cupboard so I didn't use any and they turned out okay.
