Jelly Fluff

This recipe is out of one of my all time favourite cookbooks the CWA cookbook. A couple weeks ago one of my friends told me that the CWA cookbook is a book that you get when you get married, but if I were you I wouldn't wait that long and I'd get my hands on a copy as soon as possible. It is one of the must have Australian cookbooks.

Jelly Fluff
-1pkt Jelly Crystals
-1 small tin evaporated milk
-1/4 cup sugar
-3/4 cup hot water
-1 tablespoon lemon juice

Melt jelly crystals in hot water and stir till dissolved. Allow to cool and begin set. Whip milk with sugar and lemon juice and whip in jelly. Serve in glass dish garnished with fruit, whipped cream or chopped jelly.
